Nepal Farmers White
White tea from Ilam, Nepal. Beautifully processed, slightly oxidized, longitudinally rolled, completely unbroken leaves consisting exclusively of young silver fluffy leaves. A light, golden green infusion with a delicate, herbal, sweet and creamy flavour with hints of lime blossom, a trace of nuts and floral honey.
How to prepare Farmers White
Use 5 grams of tea leaves for 0.5 litre of boiling water cooled to 85-90 °C, steep for 2–3 minutes. Feel free to experiment with steeping time, water temperature, and the amount of tea leaves. These tea leaves are also suitable for Asian-style preparation, which includes multiple infusions: you steep 5 grams of tea leaves per 150 ml of water that has boiled and cooled to 85–90 °C for 30 seconds and in the following three infusions, you steep the leaves for 40, 60, and 90 seconds, respectively.
The garden is located in the Ilam region in the very east of the country near the border with Darjeeling at an altitude of 1750 m on an area of 0.35 hectares. It is a relatively young (17 years) project of a local Rai family. The processed tea comes partly from the produce of this small family garden and partly from nearby farmers.
